2007 Cabernet Sauvignon

One of the common traits of this wine is the fruit forward, inky dark color and an aromatic nose. The wine is bold but elegant and well balanced. We source our Cabernet Sauvignon from multiple vineyards and sub-applications as the base wine; we blend Merlot and Malbec to refine the wine. We only use 100% new French oak barrels.

We adhere to strictest quality standards. From the vineyard, the clusters are all hand-sorted, 100% de-stemming, the berries are again hand sorted, berry by berry. After three to five days of cold pre-fermentation in small open-top fermenters, we start fermentation by adding yeast. Four to five weeks later; the fruit is gently pressed and moved to barrel where it finishes the remaining secondary fermentations. The wine continues to the carefully age in new French oak barrels from artesian French Coopers. To assure proper aging we age our wines for about eighteen to twenty months in a combination of rare barrels from Ana Selection and Darnajou. After many blending trials, the wine is bottled, unfine and unfiltered.

Our goal at PATEL is and always will be, to produce beautiful wines of outstanding quality, with distinction and elegance. Our goal is to make wines that are both “powerful and elegant” and pair well with a broad range of foods. Our Cabernet Sauvignon has the style and quality that are with par wines from the great ‘Left Bank’ region of Bordeaux, France.

Ratings The 2007 Proprietary Red No. 1, a blend of 86% Cabernet Sauvignon, 8% Merlot, and 6% Malbec, has beautiful and exceptionally pure creme de cassis notes intermixed with spring flowers, spice, and flowers. The complex aromatics are followed by a flawlessly constructed wine with full-bodied richness. The elegance, purity, and texture build incrementally and last a long time on the palate. The cascade of creme de cassis fruit almost reminded me of the kind of fruit and texture one sees in more recent vintages of Pontet-Canet or some of the brilliant Cabernet-based wines from Lewelling in Napa Valley. This wine is drinkable now, as many 2007s are, but capable of two decades of cellaring.
